In the heart of Rome’s most authentic and vibrant neighborhood, Trastevere, Fabullus offers a truly unforgettable experience. Hidden beneath an 18th-century building, this atmospheric underground cellar was once a Roman cistern dating back to the 1st century AD, now carefully restored and transformed into a space of rare charm. Furnished with antique pieces and enveloped in history, Fabullus is a place where time stands still—the perfect setting for an exclusive food and wine journey.

By reserving this experience, you’ll step into a world where Italian tradition, taste, and storytelling come together. As you descend into the cellar, the ambiance alone sets the tone: ancient walls, soft lighting, and centuries of history whispering around you. Our dedicated staff will welcome you warmly and guide you through a curated tasting that celebrates the richness of Italy’s culinary heritage.

The food served at Fabullus is the result of a meticulous selection from small Italian producers who follow traditional, sustainable methods, many of whom are recognized by the Slow Food presidium for their commitment to biodiversity and environmental respect. Every element—from the wines to the cheeses, from the cured meats to the olive oils—tells a story of region, craftsmanship, and culture.

As you sip on Prosecco and four premium Italian wines chosen by our sommelier, you'll savor a wide variety of traditional delicacies: richly flavored cured meats, fragrant Roman pizza, fresh and aged cheeses, velvety buffalo mozzarella, creamy ricotta, and a medley of vegetables preserved in oil or vinegar. You’ll taste the depth and elegance of extra virgin olive oils, including the exceptional Majatica variety, accompanied by homemade breads, artisanal jams, local honey, and to close, authentic Italian gelato and a bold espresso coffee.

This is more than just a tasting—it’s a celebration of Italian excellence, perfect for a refined lunch or dinner, and a memorable way to mark your time in Rome.

Fabullus Wine Cellar / Food tasting with wine pairing. The meeting point is at Via dell'Arco di San Callisto 20, inside the "Residenza San Callisto", at Fabullus Wine Cellar. We kindly ask all guests to arrive at least 5 minutes before the scheduled start time to ensure a smooth and timely beginning of the experience.

  • Begin your journey with a refined glass of Prosecco, followed by a carefully curated selection of one premium Italian white wine (Special Reserve) and three top-quality Italian red wines (Special Reserve), each expertly paired with traditional Italian delicacies.
  • The tasting menu features a  selection that includes:
  • A variety of fresh and aged cheeses,
  • Cured meats, such as prosciutto, mortadella with pistachio, and artisanal salumi,
  • Buffalo mozzarella and buffalo ricotta,
  • Marinated vegetables in oil or vinegar,
  • Four types of olives,
  • Three varieties of traditional bread,
  • Extra virgin olive oil, including select regional varieties,
  • Authentic Roman pizza,
  • A sweet finale with honey and jams paired with cheeses, artisanal Italian dessert or gelato, and espresso coffee.
  • Please note that ingredients may vary based on seasonal availability and product freshness, ensuring the highest quality at every tasting.
  • We are pleased to offer vegetarian or gluten-free menus, available upon request at the time of booking.
