Italy produces more truffle varieties than any other country in Europe, and the geography of the hunt changes significantly depending on where you are. Piedmont in the northwest is white truffle country — Tuber magnatum, harvested between October and December from the hazelnut and oak groves around Alba, Asti, and the Langhe hills. Umbria and Tuscany are the heartland of the black truffle, Tuber melanosporum, with the area around Norcia long regarded as producing the finest specimens on the peninsula. The Marche, Abruzzo, and parts of Sardinia round out a map of truffle territory that covers much of the country.

Italian truffle tours tend to be well-organized and deeply embedded in local food culture — the hunt is rarely an isolated experience but part of a broader morning that includes a visit to a local farm, a demonstration of cleaning and grading, and a lunch or dinner where the truffles appear in their proper context: shaved over tajarin pasta, stirred into a risotto, or simply laid over a fried egg with good olive oil.
