Cape Verdean food reflects the islands' position as an Atlantic crossroads — Portuguese colonial cooking filtered through African ingredients, Indian Ocean spice routes, and the particular creativity of a culture that historically had to work with what arrived by ship. Cachupa — a slow-cooked stew of hominy corn, beans, and various meats or fish — is the national dish across all nine inhabited islands, with each island having a version it considers definitive. The Santiago version is richer and meat-heavy; the São Vicente version, eaten in the bars of Mindelo, is lighter and often served the next morning refried in a pan as cachupa refogada. Grogue, the Cape Verdean sugarcane rum, is consumed straight, in ponche (mixed with lime and honey), or as the base of all the island drinking culture. The Portuguese-heritage pastéis de nata and pastel com diabo dentro (tuna-stuffed pastry) occupy the baking tradition. It really hits differently.
