Outdoor Spain, as it is booked, has three centres of gravity. Mallorca is the first and largest: the Serra de Tramuntana along the northwest coast, the hairpins down to Sa Calobra, the Formentor headland, the caves at Porto Cristo with their underground lake, and Valldemossa, Deia and Soller on the mountain road. Catalonia is the second: Montserrat, the serrated massif with a monastery built into it an hour from Barcelona, reached by cogwheel train and usually paired with a cava cellar; and the Costa Brava coves, with boat days out of Tossa de Mar. The Canaries are the third: Teide's crater at 3,715 metres, the whale channel off southern Tenerife where pilot whales stay all year, and the Gran Canaria ravines.
The formats repeat. Boats are the backbone: sailing days from Palma and Ibiza across to Formentera, catamarans with a swimming stop, and the small traditional llaut, which beats the big boats for four. On land it is the mountain road trip with a driver who knows where to stop. Then the air: helicopters over the Tramuntana, short, expensive and, for once, worth it. Ibiza adds buggies for the inland tracks, Seville a paddleboard on the Guadalquivir, Tenerife an evening on Teide under a sky dark enough for observatories.
Practical. Almost everything doubles: a seat in a group at roughly the price of a good lunch, or the whole boat, car or aircraft to yourselves at several times that, which flips the arithmetic once there are four of you. Coastal trips are cancelled for wind on the morning and the money comes back, so build a spare day into a short trip; sunset slots and weekends go first. Mallorca and the Costa Brava run March to November; the Canaries have no off-season, and January there is busier than June. Pack for two climates if the Canaries are involved — the coast at 22C and Teide below freezing on the same day — and bring reef shoes for the Balearic coves, which are stone rather than sand. Skippers and guides are tipped in loose change, not percentages.
