On the tour, you will be able to find out more about Moroccan cuisine and learn the authentic Moroccan ways of cooking, while you will get taught by local cooking experts. The culinary tour in the Atlas Mountains will begin from Marrakesh, and you will have a shared class at an Imlil guesthouse beneath Mount Toubkal. You will learn how to cook tajine, also known as maraq, a slow-cooked savory stew made in earthenware pots. This dish is usually made with sliced meat, poultry or fish that would be mixed together with vegetables or fruit. Local cooks often add to it spices, such as ginger, cumin, turmeric, cinnamon, saffron, paprika and chili, as well as nuts and dried fruit. Another dish that you will master will be couscous, a Berber dish of small steamed balls of crushed durum wheat semolina that is traditionally served with a stew. In the region, it is usually prepared with meat and vegetables, such as carrots, potatoes and turnips, and cooked in a spicy or mild broth. Also, saffron is often added to Moroccan couscous. The class will be set up for you in the kitchen or on the house's terrace, and you will receive careful guidance from the local experienced cooks. Then, you will have lunch, trying the dishes, set on a walking tour around the village and return to Marrakesh.
