Your local host will meet you in her private home, where you will also taste six glasses of local white and red wines, each paired with six different types of Sicilian cheese. In addition to the six delicious wines from some of the best wineries in Sicily and the variety of local cheeses, you will also taste some fresh local delicacies, such as homemade bread, olive oil, and other traditional Sicilian treats, like caciocavallo. It is a delicious regional cheese produced from cow's milk and is one of the classic Italian cheeses. It goes well with heavier wines and is typically grated over pasta. Grated cheese is a common application for it. Frappato wine, which should be tried with good bread from Castelvetrano, is recommended to go with the dish.
You will also try Ricotta Infornata, a cheese made in the central part of Sicily from sheep's milk. Ricotta is a type of cottage cheese whose name means "recooked." Ricotta infornata is distinguished from other types of ricotta in that it is baked in the oven before serving. Try it with a green salad and a white wine such as Grillo!
