Two hours of the day matter most in Cappadocia: the one before sunrise and the one before dark. Hot air balloons lift while it is still dark, dozens of baskets at a time, and a flight over Love Valley and the chimneys of Cat Valley takes about an hour from launch to landing. Couples who would rather stay on the ground book a balloon watching tour instead, about ninety minutes at a viewpoint with tea while the envelopes fill and rise.

Cave hotels in Göreme, Ürgüp and Uçhisar cut their rooms into the rock, and the terraces face the valleys rather than the street, with dinner served in the courtyard. The balloons are cleared or grounded at dawn by the civil aviation authority, on wind, so book the flight for your first morning and keep a spare day. Pickup is around 04:30 to 05:00 and the outing takes two to three hours; photo sessions run sixty to one hundred and twenty minutes. Spring and autumn have the steadiest mornings, winter brings snow on the chimneys and dawn temperatures below freezing.
