The landscape of Cappadocia is made of volcanic ash: tuff layers compressed millions of years ago, then cut by water and wind into pillars and cones, some still capped by basalt that shielded the rock beneath from erosion. From Nevşehir, walking routes lead into these landscapes through Pigeon Valley, with dovecotes carved into the cliffs, and through the Red Valley, where the tuff turns pink at sunset.

The Green Tour goes further — into the Ihlara valley, a fourteen-kilometre gorge with a river along its floor, reached by a stairway and followed on foot past rock-cut churches. It is the only place in Cappadocia where grass and poplar shade replace the dry plateau underfoot. Horse and camel rides work differently: short, keeping to the nearer valleys, and meant for anyone who wants the scenery without a long walk.

The balloon flight is its own format: lift-off before dawn, an hour above the valleys while the sun clears the edge of the plateau. It is cancelled on wind, so a spare day is not wasted. Practical notes: the plateau lies above a thousand metres, summer mornings can be around ten degrees and afternoons above thirty, so dress in layers. Closed shoes only — tuff crumbles and slips underfoot.
