Culture in Cappadocia was carved rather than built, and it was mostly carved by people hiding. The rock churches around Göreme were cut by Byzantine monastic communities between the ninth and eleventh centuries, and their frescoes survive in two very different registers: the early aniconic chapels painted with plain red ochre crosses during the iconoclast period, and the later ones — Karanlık, Elmalı, Çarıklı — with full narrative cycles in lapis and gold. Seeing both in one visit is what makes the art in Cappadocia legible.

Craft here is still a working trade, not a demonstration. Avanos has thrown pots from Kızılırmak clay since the Hittites, and a pottery workshop in Cappadocia usually means an hour at a kick wheel with a master correcting your hands, not watching from a bench. Carpet workshops in the villages show the difference between the double-knotted wool of the Anatolian nomads and the silk Hereke pieces, and there are still houses where women weave to order.

Evening cultural tours in Cappadocia mostly mean the sema — the Mevlevi whirling ceremony, performed in the thirteenth-century Sarıhan caravanserai on the road to Kayseri. It is a religious rite rather than a show: no applause, no photographs during the turning. Around it, Turkish nights in the cave restaurants of Ürgüp and Göreme run the other way entirely — folk dance, saz, and food that arrives for hours.
